Atún de almadraba encebollado al estilo de Zahara de los Atunes.

Resulta muy atrayente la gastronomía de la provincia de Cádiz, gran parte de ella abierta al mar, que surte desde una inacabable despensa marina pescados y mariscos de lo más variado. Si añadimos a esta condición natural, las influencias culturales que han ido arribando a la Tacita de Plata, disfrutamos de una diversa y surtida cocina saludable, sana y muy rica.

Atraído  por éste o similares argumentos, nuestro chef de cabecera, el gran Edu Lara, se ha desplazado hasta esta tierra en su periplo veraniego trayéndonos de regalo un apetitoso plato marinero de origen gaditano, cual es el que reza en el titular de este artículo.

Y ya no digamos si el atún elegido para nuestra receta pertenece a la parte de la ventresca… para chuparse los dedos y me quedo corto.

Ingredientes:

-1kg de lomo de atún fresco.

-2 cebollas, chalotas o cebolletas (a elegir).

-1 hoja de laurel.

-3 ó 4 granos de pimienta.

-1 cucharada de pimentón de la Vera.

-1/2 vaso de fumet de pescado o agua mineral.

-Aceite de oliva virgen extra.

-Chorrito de vinagre.

-Sal.

-Patatas al vapor (opcional).

Elaboración:

(Esta receta fue cocinada en Conil en la provincia de Cádiz)

En una sartén amplia, ponemos el aceite a calentar. Cortamos  las cebollas en juliana y añadimos. Ponemos sal, granos de pimienta y pochamos hasta que veamos la cebolla transparente, añadiendo a continuación el laurel. Cortamos el atún en trozos cuadrados de regular tamaño, agregamos sal y reservamos.  Cuando esté pochada y rehogada la cebolla, incorporamos el pimentón de la Vera, una cucharada, añadiendo de inmediato el chorrito de vinagre más el fumet (o el agua), más o menos medio vaso. Reducir hasta lograr la salsa, poniendo el atún encima, un minuto por cada lado y retirar. Dejar reposar cinco minutos y listo.

Si se le encuentra el punto a esta receta, el resultado es un plato con el que se nos hace la boca agua. Esto no es cocina confusión, es cocina española, de la que enamora. Diversidad de ingredientes mezclados para resaltar al protagonista de la receta, el atún de la almadraba asentado sobre base armónica de sabores.

No cabe duda de la capacidad de nuestro cocinero, Edu Lara, que además disfruta en la elaboración de sus recetas, ya clásicas en Daimiel al día. Su inclinación natural hacia los fogones, más la experiencia práctica, unida a su insaciable progreso en la gastronomía, nos proporciona placeres de mesa altamente apetitosos.
