CARACOLES EN SALSA DE LARA

La lluvia y el sol, propios de la primavera, propician la aparición de caracoles. Caminos, sendas o veredas se pueblan de estos apetitosos moluscos, muy apreciados en las diversas comunidades de España, donde se cocinan y consumen de distintas maneras, con variedad de salsas y toquecito de picante. Es plato de sabor tradicional que conlleva preparación con alto contenido en hierro, calcio y fósforo, proteínas buenas y además antioxidantes.

Edu Lara, nuestro excelente cocinero y gran conocedor de la gastronomía, nos prepara en esta entrega una deliciosa receta para esta época del año, con unos caracoles en salsa de Lara, de toque personal, que a buen seguro reavivará la popular pasión por los caracoles.

Acompaña nuestro chef receta complementaria de caracoles a las finas hierbas, con el apetecido molusco de inferior tamaño.

*Caracoles en salsa de Lara*

Ingredientes:

Caracoles gordos y hermosos, ajo, cebolla, sal, pimiento verde, tomate triturado, pimentón, picantillo y pimienta, jamón y chorizo.

Elaboración:

Los caracoles, muy bien lavados durante un par de días, removiendo tantas veces como sea menester, hasta limpiar bien de babas y tierra, siendo este inicio punto importante para la receta. En cacerola con agua y laurel, cebolla, cabeza de ajos, pimiento rojo, pulpa de choricero, pimiento verde, sal, chorreón de aceite, se vuelcan los caracoles a fuego medio, subiendo con golpe de calor evitando con ellos se escondan en la concha. Retirar con frecuencia por medio de un cucharón o espumadera las babas de la superficie.

En una sartén con aceite de oliva virgen extra sofreímos ajo laminado, cebolla cortada, pimiento verde, picantillo, tomate triturado, pimentón de la vera, pimienta y sal. Se pasa todo por el pasapuré y obtenemos la salsa. Con anterioridad, sellamos en el aceite taquitos de jamón y trocitos de chorizo de Framarco finamente cortados, reservando para después. Añadimos caldo de la cocción de los caracoles a todo en conjunto y obtenemos una salsa más trabada. Incorporamos los caracoles en una olla, mezclamos con la salsa y dejamos reducir unos diez minutos, quedando listo este manjar, con una salsa final de “toma pan y moja”.

*Caracoles a las finas hierbas*

Ingredientes:

Caracoles pequeños, aceite, pimienta, hierbabuena, pimiento rojo, pimiento verde, perejil, laurel, pimentón, picantillo, ajo y pulpa de pimiento choricero.

Elaboración:

Como en la anterior receta, limpiar muy bien los caracoles, dos días con frecuentes cambios de agua hasta hacer desaparecer la porquería.

En una olla con agua y laurel, verter un chorreón de aceite, agregando la hierbabuena, el perejil, la pimienta, el ajo, cebolla, pimentón, pimiento verde, sal, picantillo y pimiento rojo, junto a la pulpa del pimiento choricero. Todo ello en crudo y en frío. Añadimos  los caracoles subiendo temperatura hasta que el molusco queda fuera. Se desespuma bien y en diez minutos aproximadamente ya está listo el condumio.
