Recurrente y popular plato manchego con toques característicos de cada guisandero. Comida de plato único, reunión campestre en torno a una buena “sartená” de gachas o acompañamiento en cazuelita como aperitivo para la caña, el vinito o el vermut. Se presta o acompaña para cada evento social, degustadas siempre en buena compañía.

Lejos de comida socorrida en tiempos lejanos, cuando escaseaba la manduca, en los tiempos actuales las gachas de Daimiel reúnen en torno a la sartén a quienes pretenden pasar una buena jornada fomentando gastronomía y amistad, acompañado todo por un buen vino del lugar, a ser posible en bota.

Condumio sencillo, por ingredientes y elaboración, pero con un punto preciso que da el toque atrayente al paladar. Nuestro especialista en los fogones, Edu Lara, nos muestra su elaboración, con pausa y buena mano, hasta lograr ese punto óptimo, tono tostado y sabor inconfundible.

Damos paso pues, al proceso personal de Edu Lara en la preparación de estas gachas manchegas, consumidas bien con cuchara o mejor mojando buenas “sopas de oreja mula” pinchadas con la navaja, aplicando siempre la consigna de “cuchará y paso atrás”…

Ingredientes: (4 personas)

Harina de almortas (cuatro cucharadas)

Un pimiento choricero

Un litro de agua(aprox.)

Medio vaso de aceite de oliva virgen extra

Sal

Ajo morado de Las Pedroñeras

Dos chorizos de matanza

Dos tiras de mesao

Un pan grande de hogaza

Opcional: Una pieza de especia manchega (Alcaravea)

Elaboración:

En una sartén grande añadir el aceite de oliva, dorando el pimiento choricero por todos los lados. Apartar. Cortar en trozos pequeños el chorizo y el mesao y dorar en la sartén. Apartar y reservar. Dorar dos dientes de ajos y machacar en el mortero con el pimiento choricero. Triturar todo en una batidora con agua, un cuarto de litro a ser posible caliente, nunca fría, al objeto de que no se hagan grumos. Apartar en un vaso mezclador. En el mismo aceite donde hemos frito los ingredientes, añadir la harina necesaria (una cucharada por persona) removiendo con varilla hasta tostar la harina (que no sepa a crudo). Una vez que hemos disuelto la harina con el aceite, añadir el agua poco a poco (la que tenemos apartada en el vaso mezclador), añadiendo la cantidad que te vaya pidiendo y removiendo con la varilla, como al hacer una bechamel.

Una vez añadida todo el agua, añadir también los ingredientes (compango), chorizo y mesao apartado anteriormente, mezclando todo bien y mover hasta lograr una masa homogénea, añadiendo la sal al gusto, siguiendo removiendo con la varilla.

Una vez suben pompas y el aceite sube arriba, remover… ¡y listas!. Consumir en caliente, al momento, así es como están ricas.

Si observamos las imágenes de ingredientes y asimilamos la elaboración de nuestro gastrónomo, podemos cocinar en cazuela sin gran dificultad este plato incluso para la comida familiar, ya que sencillos ingredientes y fácil elaboración, nos puede proporcionar, en punto idóneo, un auténtico manjar.
