Uno de los platos por excelencia del Norte de España resulta ser din duda el bacalao al pil-pil. Delicia para el buen gastrónomo y un placer para el de los fogones, que disfruta durante la ceremoniosa elaboración tanto como al recibir parabienes por el degustador. Tiene un punto concreto la específica elaboración de este excepcional guiso. El buen cocinero se distingue y cataloga cuando el experto catador otorga aprobación para una de las más tentadoras presentaciones del bacalao.

No resulta fácil cuajar los jugos del bacalao combinados con el aceite, con mano tranquila y movimiento armónico, suave, y a determinado ritmo. Es el momento estelar de la elaboración, para lo que se precisa tacto, experiencia y talento, virtudes que adornan los condumios que prepara nuestro chef de cabecera para este periódico digital. El gran Edu Lara, nos sorprende con un manjar de dioses sin salir de Daimiel.

Ingredientes:

700 grs. de filetes de bacalao desalado.

Un vaso grande de aceite de oliva.

Seis dientes de ajo.

Una o dos guindillas.

Perejil.

Elaboración:

Secar el bacalao con papel absorbente y reservar. Pelar los ajos y cortarlos en láminas. Introducirlos en una cazuela plana con el aceite y la guindilla, cociendo a fuego medio hasta que estén dorados, retirándolos con la espumadera.

Retirar la cazuela de barro del fuego dejando templar el aceite. Agregar seguidamente el bacalao con la piel hacia abajo y cocer en el fuego lentamente unos tres o cuatro minutos para que el bacalao suelte su propia gelatina. Dar la vuelta al bacalao, agitando la cazuela en sentido rotatorio hasta que la salsa se ligue, retirándolo del fuego si cuece demasiado fuerte. Sacar el bacalao y emplatar los filetes lapando con el pil-pil (tapando) y decorar con los ajos, guindillas y perejil.

La presentación que nos ofrece el reputado cocinero de Daimiel, despierta por si misma el deseo de degustar tan tentador plato.
