La ganadería ha sido y es un pilar fundamental en la alimentación humana, junto a la agricultura. El ganadero vela por la adecuada alimentación de su ganado, en este caso ovejas, y les procura además cobijo y agua. Por tanto, el oficio de la ganadería hay que tenerlo bien asimilado para conseguir de estos animales el producto fundamental y básico en nuestra alimentación,  como es la leche, de la que se derivan grandes industrias, una de las cuales es la elaboración del queso.

Para obtener leche de calidad hay que tomar precauciones desde el ordeño, para de esta forma garantizar las mejores condiciones sanitarias. Un importante porcentaje de la producción de leche se destina a la producción de queso. El consumo de este alimento, altamente nutritivo como fuente de proteínas, calcio, vitaminas, etc, ha aumentado en las últimas décadas. Calidad, variedad, sabores únicos y apetitosos, y sobre todo saludables, son adjetivos que han logrado introducir el queso en las neveras de las familias como alimento cotidiano. Sin olvidar que, el queso ha sido alimento básico desde las antiguas civilizaciones.

Mundialmente reconocidos son los quesos provenientes de Francia, Inglaterra, Suiza… pero sin ir a la zaga los españoles destacando entre los más demandados, nuestro queso, elaborado generalmente con leche de oveja.
