La gastronomía española se surte de platos variados procedentes de las diversas regiones del país. El estilo rural y marítimo, conforman una riqueza culinaria mezcla de culturas, productos y climas.
Tapas, pinchos, raciones…, aceite de oliva, legumbres, verduras, platos de cuchara, platos internacionales desde la base de productos nacionales…, España es un país de creatividad culinaria.

La cocina de fusión, con sabores desconocidos para nuestro paladar, que algunos cocineros modernos se empeñan en presentarnos, no obtiene mucho éxito. Cocina sin fuego, productos asiáticos, insectos, maridajes impensables, hermanamientos culinarios de difícil aceptación…, como que no triunfan. Las técnicas culinarias tradicionales, al final, son las más aceptadas por la mayoría en nuestro país. Productos de toda la vida, la mano del cocinero, olores y sabores de siempre, es lo más solicitado y vendido en la mayoría de restaurantes en España. Se advierte cierto rechazo y hasta rechifla hacia la cocina de vanguardia cargada de pedanteria, y se apunta de nuevo hacia el potaje y el cocido como índice de seguridad nutritiva históricamente demostrado, si bien no se cierran puertas a innovaciones, pero desde la base del producto tradicional. Tradición y vanguardia pueden ir a la par, dentro de un orden. La cocina del soplete está supervalorada, frente a los deseos sencillos del comensal de a pie.

Interés, eso sí, mucho interés se detecta hacia el mundo de la cocina. Y va en aumento. El “bricolaje culinario”, cada vez goza de más adeptos. Algunos se afanan en descubrir sus posibilidades en los fogones y se encuentran con su propio fracaso, les supera la propia inutilidad. Otros, por el contrario, hete aquí que se destapan como humanos que no sabían de su potencial creativo culinario. Y hay otros, que se lo comen todo, que viven obsesionados por la comida y sus desentrañables, para ellos, misterios. Cómo lograr un buen guiso, un “complicado” pescado al horno o una carne en su punto, se convierte en obsesión para estos agradecidos e insaciables comensales. Hay gente “pa to”, que dijo el torero “El Gallo”. Gente compulsiva que se zampan todo lo que pillan, llegando en algunos casos a crearse, sin darse cuenta, un problema sicológico o de adición. Un pensamiento constante, porque todo está muy rico, convierte la comida en una especie de droga de la que pueden prescindir.

Resulta sonrojante en los tiempos que corren tratar estos temas con cierta frivolidad, pero sin duda, en la sociedad económicamente estable, estos planteamientos y vivencias se producen.
