En las huertas de Malagón, se cultiva una legumbre de máxima calidad. El agua y la tierra de la zona, junto al esmerado laboreo de sus agricultores, produce una judía pequeña, tierna y suave, de textura y sabor característico : la judía pinesa de Malagón. Con forma de riñón, esta alubia está catalogada como producto exquisito, para gourmets, aunque hoy día está al alcance de quienes conozcan su existencia. La mejor legumbre de esta zona manchega.

Como quiera que nuestra tierra reúne características ideales para la proliferación de la perdiz salvaje, los cazadores con sus perros se patean cotos en busca de cobrar piezas silvestres que son difíciles de cazar, suponiendo trofeo preciado para las acertadas escopetas que consiguen abatir piezas de perdiz.

Ya tenemos pinesas, ya cazamos perdices, todo encaja para que nuestro guisandero de cabecera Edu Lara nos cocine con sus expertas manos y toque característico un plato, Judía pinesas con perdiz, que cuando se degusta, no es para contarlo, eso es para verlo…. y catarlo.

Nuestro gastrónomo, elabora esta pitanza más o menos ajustado al criterio personal conseguido por propia experiencia.

Ingredientes:

Judías pinesas, más o menos medio kilo; dos perdices hermosas; una cabeza de ajos; laurel; poquito de pimentón; cebolla; zanahorias; vino blanco; vinagre; pimienta; aceite de oliva; sal. Algunos de estos ingredientes, a gusto del cocinero.

Elaboración:

Como son judías pinesas, no debe sobrepasar el tiempo de cocción más de una hora, con cabeza de ajos y laurel. A la vez que cuecen las piensas, preparamos la perdiz, en cazuela aparte , con aceite, cebolla en cantidad generosa zanahoria en cachejos y dos o tres ajos ya pelados. Sofreímos un poquito y agregamos las perdices, salpimentamos y , tras un par de meneos contundentes, añadimos vino y vinagre, pasando a cubrir todo con agua y dejando cocer un par de horas, porque las perdices son de caza. Cuando estén cocidas, las apartamos.

En otra cazuela, ponemos aceite y un poquito pimentón, una vueltecita y enseguida incorporamos el caldo de cocer las perdices, agregando posteriormente las perdices desmigadas, dejando todo cocer unos cinco minutos.

Mezclamos después con las judías y dejamos cocer todos entre diez y quince minutos. Procurar no remover con cuchara, sino voltear con energía de vez en cuando, para que espese todo en conjunto.

Este artista de los fogones, logra un nuevo manjar con productos de la tierra, cosa rica este autentico plato manchego. Al día siguiente, si sobra, que no creo, le añadimos un chorreoncico de aceite de oliva del bueno, con una poquita cebolleja bien picada, revolvemos, nos preparamos un trocico de pan blanco y se nos saltan las lágrimas.
