Que te vas a echar unos chatos el sábado a mediodía con los amigos, y resulta que te ponen una cazueleja de migas como aperitivo… Que te juntas en la cocinilla con la familia o los amigos y que alguien dice que vamos hacer unas migas… Que celebras el cumple de la suegra y se terminan haciendo migas… Que hay fiesta institucional masiva, y se preparan grandes calderetas de migas… Y es que las migas es vianda habitual que a todos nos gusta. Y cuesta poco.

Nuestro gastrónomo de cabecera, Eduardo Lara, nos elabora en esta ocasión este guiso tradicional de Daimiel, muy conocido y socorrido en la cocina española, siendo muy destacada su presencia en la cocina regional sobre todo.

Ingredientes: Pan duro, no demasiado, troceado en cachejos (cuadraditos); aceite de oliva; ajos; pimiento rojo seco; sal, agua; chorizo; panceta; uvas.

Elaboración: El pan lo echamos en remojo con agua y sal aproximadamente hora y  media, envuelto en un paño. De vez en cuando le damos vueltas para que se distribuya la humedad. Freímos en la sartén con aceite el pimiento, poco tiempo, que no se ponga negro. El tocinejo hecho cachejos con el choricillo en trocejos pequeños, los freímos también. Machacamos el pimiento hasta hacerlo polvo. Guardamos todo fuera de la sartén. A continuación freímos los ajos hasta que se doren, añadimos  las migas y vamos dando vueltas con paciencia y mimo hasta que queden sueltecicas, tostadicas y brillantes. Echamos después el pimiento hecho polvo con los torreznillos y el choricejo. Mezclamos todo tranquilamente. En ná de tiempo, ya se pueden comer. Uvas de acompañamiento, con buen vino de Daimiel, blanco o tinto, el caso es que no falte. También hay quien las consume echándole un par de huevos. Pero que estén fritos. Esta comida es alimento como Dios manda, a veces llega a la categoría de manjar, dependiendo del toque y de la mano del cocinero. El caso es que conquistan y gustan a todo el personal. No hay que abusar de ellas para no crecer a lo ancho, pero de vez en cuando, ¡qué ricas están las migas! Hay que hacer buenas migas con todo el mundo.
